Hot or cold, who wouldn't want to wake up to Apple Crumble in the morning? There's good reason why people say "an apple a day keeps the doctor away." At only 95 calories, apples are loaded with vitamins, including immune-boosting vitamin C. This deliciously filling breakfast is a tribute to the delicious apple. Just make sure to leave the skin on - that's where all the hearty-healthy flavonoids are hiding!

Ingredients
⅓ cup large flake oats
⅓ cup skim milk or unsweetened soy beverage
⅓ cup unsweetened applesauce
1 Tbsp. chia seeds
¼ cup apple, diced
1 Tbsp. raisins
1 tsp. cinnamon (and/or apple pie spice)
½ tsp. vanilla extract
Topping:
1 Tbsp. walnut crumbs
1 Tbsp. unsweetened shredded coconut
Instructions
Combine the first 8 ingredients into a 2 cup (16 oz) container (ie. plastic food container or Mason jar). TIP: To prevent unwanted lumps, I like to whisk the spices and sweetener into the milk before adding the other ingredients.
Mix well. Place top on container and store in the refrigerator overnight (or for a minimum 3 hours).
Give a quick stir and add a little extra milk or yogurt if needed.
Add toppings and enjoy!

*Overnight oats will keep in the refrigerator for 3 - 5 days, though best eaten within the first 12 - 36 hours (depending on preferred texture). **For a more decadent topping (shown in photo), you can use a food processor to blend 3 pitted medjool dates with the coconut and walnuts.
